Thank you for asking this as I have had this problem with using collect plus as mu courier, they’ve suddenly changed their service so that you have to provide both the phone number and the email.. obviously this is not easy thing to achieve because as a customer I would not want to provide these things, it would put me off and two, it makes things fuzzy for GDPR reasons.

Phone number isn't something Etsy asks for. It only asks for an address. or can I send the request without the phone number? That completely depends on what your shipping carrier requires, but a phone number isn't required to deliver a parcel to an address.

I guess you could include it your "thank you note" after someone places an order or add your number somewhere on your about page, listings, etc but I personally wouldn't want just anyone who looked at my shop to have my phone number.
Etsy is by far the worst when it comes to customer service. No number to call. Its hit or miss if they respond, and when they do they give you a copy paste response and just direct you to read something, without even answering your questions. When you tell them youve already read it, and are seeking a human solution to the problem they ghost you.
