    Vacuum seal them. Let it run til 95% of the ait is out of the bag, then hit the manual seal button. This will seal them airtight and keep the juice from being sucked into the machine. If you don't have a vacuum sealer, go buy one. it's a solid investment. i feeze my spawn, fish, and venison with it and it's one of my best invesments ever.

    Foodsaver Canada website says the opposite. " Leave meat in it's vacuum sealed packaging and put on a plate to thaw in the fridge, to keep contaminated ice for the outside of the packaging from getting on the meat."

    Chamber sealer is gonna wait for pole barn where it can have a dedicated location. I have a food saver big game 710, all current food saver units only pull around 15" HG. Most other units are around 24" HG. I will be going with a bag sealer as a short term solution. Still looking for input on these from people that use them. Weston Pro 3000.

    I would definitely like to grind the burger up there. My cabin that holds deer camp is rustic. No electricity and a hand pump. When I cut up my deer I keep the back straps and inner loins out and the rest goes to burger. I have a 2200watt genny I use for whatever power I do need (so running the grinder or vacuum sealer.)

    Cut some small pieces of wax paper, large enough to handle a days or half days fishing, and arrange them on a cookie sheet. Using a plastic spoon spread the eggs on to the wax paper and set into the freeze. Once frozen solid, vacuum pack the individual wax paper sheets (date them too), and return them to the freezer.

    Tasted the same as if they were caught that day. It really does make a difference using a vacuum. I suppose basically freezing them in water does the same thing because it keeps the air away from the fillets. Just seems easier and less space consumption to use the vacuum seal. You can get them pretty cheap these days.
