Well, I just tried that software update command on my "Catalina" system (that is also where I am entering this), and here is what I got: "softwareupdate --fetch-full-installer --full-installer-version 10.15.1. Downloading and installing 10.15.1 installer. Install failed with error: Update not found".
macOS High Sierra released in 2017, moved to security updates status in 2018 (after the release of Mojave), unsupported as of November 2020. macOS Mojave released in 2018, moved to security updates status in 2019 (after the release of Catalina), probably will be supported until late 2021. For those who are facing the same issue, follow those steps, in the Catalina recovery installer usb stick : 1- set the correct date (working with Catalina installer on the 17/01/2021) 2- in the terminal, run this command : diskutil list and check the volume name of your Catalina installer, example /dev/disk2s10 for me.

A security update for Catalina was last released in July 2022. Big Sur, Monterrey and Ventura were all issued security updates in October 2022. Maybe everyone here knows this, but apparently the pattern is for Apple to provide security support for the current OS version and two previous versions but none before that, according to this ...
